“All in the kitchen”: the list of ingredients and recipes by Cyril Lignac from September 13 to 17, 2021: Femme Actuelle Le MAG


To our greatest delight, Cyril Lignac returns to give us his good recipes and other chef’s advice on M6 with his now cult show “Tous en cuisine”.

Every evening from Monday, August 23 at 6:40 p.m., viewers will be able to enjoy chef Cyril Lignac in a brand new, original location but still alongside host Jérôme Anthony.

You will find below, the list of all the ingredients you will use to prepare chef Cyril Lignac’s recipes until the end of the week, from Monday 13 to Friday 17 September. To your stoves!

Monday, September 13: Blanquette of veal

The list of ingredients for 4 people:

  • 850g veal stew
  • 1 peeled onion
  • 3 peeled carrots
  • 3 green cabbage leaves, washed
  • 2 Paris mushrooms washed and without soily stems
  • 120g cooked quinoa
  • ¼ washed cauliflower
  • 1 bunch of chives
  • ¼ bunch of parsley
  • ¼ bunch of tarragon
  • 50g flour
  • 75g + 10g butter
  • 2 tbsp. teaspoon curry powder
  • 15 cl of liquid cream
  • Olive oil
  • 1 tbsp. coarse cooking salt
  • Fine salt and ground pepper

The list of necessary utensils: 1 cutting board + 1 chef’s knife + 3 plates +2 saucepans + 1 skimmer + 1 salad bowl + 1 small salad bowl + 1 grater + 1 casserole dish + 1 spatula + 1 strainer + 1 ladle + 1 small saucepan + 1 whisk + 1 frying pan

Tuesday, September 14: Duck breast with green pepper, gratin dauphinois / Lemon meringue tart

The list of ingredients for 4 people:

  • 3 duck breasts at room temperature
  • Fine salt and ground pepper
  • Green pepper sauce
  • 2 shallots, chopped
  • 15g butter
  • 2 tbsp. tablespoons cracked dry green pepper
  • 1 tbsp. tablespoon Meaux mustard
  • 10 cl of red Port
  • 15 cl chicken broth
  • 50 g heavy cream
  • Oil

For the gratin dauphinois:

  • 800 g potatoes, peeled and cut into very thin strips, not rinsed with water
  • 20 cl of full liquid cream
  • 75 cl whole milk
  • Fine salt and ground pepper

The list of necessary utensils: 1 baking dish + 1 salad bowl + 1 whisk + 1 cutting board + 1 chef’s knife + 1 frying pan + 1 plate + 2 spatulas + 1 small saucepan + 1 strainer

The list of ingredients for 4 people:

  • 8 shortbread cookies of your choice

For the lemon cream:

  • 2 organic eggs
  • 150g caster sugar
  • 20g lemon zest
  • 12 cl lemon juice
  • 1 sheet of gelatin, soaked in cold water
  • 200g butter

For the Italian meringue:

  • 4 organic egg whites
  • 230g caster sugar
  • 20g water
  • 50g untreated lemon juice

The list of necessary utensils: 2 saucepans + 1 whisk + 1 immersion blender + 1 thermometer + 1 kitchen torch + soup plates

Wednesday, September 15: Eggplant and sweet and savory filet mignon / Strawberry shortbread tart

The list of ingredients for 4 people:

  • 1 to 2 washed graffiti eggplants
  • 550 g to 600 g pork tenderloin cut into thin slices
  • 2 cloves of garlic, peeled and degermed
  • 50g semi-salted butter
  • 2 tbsp. oyster sauce
  • 1 tbsp. soy sauce
  • 1 tbsp. honey
  • 1 bunch basil or Thai basil
  • Grape seed oil
  • 2 tbsp. roasted sesame seeds
  • 1 bird’s eye chili, halved and deseeded
  • Fine salt

The list of ingredients for 4 people:

For the shortcrust pastry:

  • 60g caster sugar
  • 5g baking powder
  • 1 pinch of fine salt
  • 80g flour
  • 60 g semi-salted softened butter
  • 2 organic egg yolks

For the decor:

  • 500g strawberries, hulled and quartered
  • Strawberry jam
  • Homemade vanilla whipped cream (optional)
  • Icing sugar

Thursday, September 16: Hachis Parmentier / Chocolate mousse

  • 800g minced beef
  • 600 g Bintje potatoes, peeled, washed and cut into cubes
  • 20 cl of milk
  • 100g + 15g butter
  • 1 peeled onion
  • 4 Paris mushrooms, washed and without soily stems
  • 200 g crushed tomatoes
  • 2 sucrines
  • Olive oil
  • White balsamic vinegar
  • Fine salt and ground pepper

For the parmesan cream:

  • 50 cl of liquid cream
  • 50 g grated parmesan

Cyril Lignac’s chocolate mousse recipe

The list of ingredients for 4 people:

  • 200g crushed dark chocolate
  • 100g crushed milk chocolate
  • 17 cl of full liquid cream with 35% fat
  • 3 cl whole milk
  • 9 organic egg whites
  • 80g caster sugar
  • 50 g lace pancakes

The list of necessary utensils: 2 salad bowls + 2 saucepans + 1 spatula + 1 whisk + 1 hand mixer + 1 spatula

Friday, September 17: Roasted prime rib, ratatouille, chimichurri

The recipe for roasted rib of beef, ratatouille, chimichurri by Cyril Lignac

The list of ingredients for 4 people:

  • 1 rib of beef weighing 1.5 kg
  • 2 sprigs of fresh thyme
  • 25g butter
  • Sunflower oil
  • flower of salt
  • Fine salt and ground pepper

For the chimichurri sauce:

  • ½ bunch flat-leaf parsley, washed and stripped
  • ¼ bunch coriander, washed and stripped
  • ¼ bunch of oregano, washed and stripped
  • 6 garlic cloves, peeled and degermed
  • ½ tsp. teaspoon red chili pepper flakes
  • 2 pinches of cumin powder
  • ½ tsp. paprika
  • 1 untreated lemon
  • 1 tbsp. white vinegar
  • 20 cl of grapeseed oil

For the ratatouille:

  • 2 washed beefsteak tomatoes
  • 1 green zucchini, washed
  • 1 eggplant, washed and stemless
  • 1 red bell pepper, washed and peeled
  • 1 peeled onion
  • 2 cloves of garlic, peeled and degermed
  • 1 sprig of thyme
  • Olive oil
