Friday, January 7: Puff pastry soup with mushrooms / Grilled salmon with tandoori spices and parsnips

THE RECIPE FOR CYRIL LIGNAC’S PUFFY MUSHROOM SOUP

The ingredients for 4 people :

  • 2 puff pastry
  • 25g butter
  • 800 g ground stemless mushrooms, washed and quartered
  • 1 shallot, peeled and quartered
  • 10 cl of white wine
  • 1 sprig of thyme
  • 40 cl of liquid cream
  • 1 tbsp. 5 spice coffee
  • 1 egg yolk
  • Olive oil
  • Ground pepper

Utensils : 1 saucepan + 1 spatula + 1 hand blender + 1 board + 1 cookie cutter 12 cm in diameter + 1 brush

THE RECIPE FOR GRILLED SALMON WITH TANDOORI AND PARSNIP SPICES BY CYRIL LIGNAC

The ingredients for 4 people :

  • 500 g parsnips, peeled and cut into pieces
  • 1.5 liters of chicken stock
  • 15 g very cold butter
  • 4 salmon steaks, 120 g each
  • 1 tbsp. tandoori spices
  • 200g fresh bean sprouts
  • 2 tbsp. sesame seeds
  • A few coriander leaves
  • 1 lemon juice
  • Olive oil
  • Fine salt

Utensils : 1 saucepan + 1 blender + 2 pans + 1 spatula + 1 plate

Monday, January 3: Marinated beef, Asian vinaigrette / Cod with bacon, mixed vegetables

The ingredients for 4 people :

  • 240g beef tenderloin
  • Fine salt and ground pepper

For the Asian vinaigrette:

  • 50g oyster sauce
  • 50g soy sauce
  • 50g olive oil
  • 1 tbsp. honey
  • 1 lemon
  • 1 orange
  • 1 tbsp. chopped ginger

Utensils : 1 plate + 1 salad bowl + 1 whisk + 1 microplane + 2 spoons + 1 kitchen torch + 1 mandolin + 1 board + 1 slicing knife

The ingredients for 4 people :

  • 1 piece of cod of 500 g in the heart
  • 25 g + 15 g semi-salted butter
  • 12 thin slices of country or Gascon bacon
  • 8 carrots, peeled
  • 2 golden ball turnips, peeled
  • 2 tbsp. roasted and crushed buckwheat
  • 1 clementine, peeled, quartered
  • 2 tbsp. honey
  • 25 cl chicken broth
  • Olive oil
  • Fine salt and ground pepper
  • flower of salt

Utensils : 1 frying pan + 1 spatula + 1 plate + butcher’s twine + 1 sauté pan + 1 cutting board + 1 knife + 1 bowl + 1 saucepan + 1 spider + 1 bowl of cold water with ice cubes

Tuesday, January 4: Crispy warm goat cheese, walnuts and dried duck breasts / Cannelloni stuffed with Bolognese

The ingredients for 4 people :

  • 4 rocamadours
  • 4 sheets of filo pastry
  • 50g melted butter
  • 4 handfuls of lamb’s lettuce or flame treviso
  • 100 g dried duck breasts
  • 12 shelled fresh walnuts
  • ¼ ball celery, peeled and washed
  • 12.5 cl cider or walnut vinegar
  • 37 cl of olive oil
  • 62g honey
  • A few powdered green sichuan berries
  • Fleur de sel and ground pepper

Utensils : 1 brush + 1 pan of neutral oil at 190°C + 1 whisk + 1 small bowl + 1 knife + 1 cutting board + 1 mandolin + 1 bowl of water with ice cubes + 1 plate with a sheet of paper towel

The ingredients for 4 people :

  • 18 tubes of cannelloni cooked in water and not rinsed then cut in 2 widthwise
  • 400g minced beef
  • 1 clove garlic, peeled
  • ½ onion peeled and chopped
  • 1 carrot peeled and cut in 2
  • 150g Paris mushrooms, stemmed, washed and sliced
  • 1 little fresh thyme
  • 25 cl of red wine
  • 500 g of tomato coulis or crushed tomato
  • 20 cl of full liquid cream
  • 200 g grated parmesan
  • 1 piece of grating parmesan or other grating cheese
  • Fine salt and ground pepper
  • 1 tbsp. coarse salt
  • A few sprigs of basil

Utensils : 2 saucepans + 1 skimmer + 2 plates + 1 cutting board + 1 chef’s knife + 1 spatula + 1 small saucepan + 1 removable springform pan 18 cm in diameter

Wednesday, January 5: Chocolate king cake

THE RECIPE FOR CYRIL LIGNAC’S CHOCOLATE GALETTE DES KINGS

The ingredients for 4 people :

For the puff pastry and the gilding:

  • 2 rolls of puff pastry
  • 1 egg
  • 1 egg yolk
  • 1 tbsp. water

For the chocolate cream:

  • 30 cl whole milk
  • 20g caster sugar
  • 20g cornstarch
  • 85g chopped milk chocolate
  • 85g chopped dark chocolate

For the syrup:

  • 100g water + 100g sugar

Utensils : 1 baking sheet + 1 silicone sheet or 1 sheet of parchment paper + 1 brush + 1 small bowl + 2 salad bowls + 1 hand mixer + 1 spatula + 1 paring knife + 1 angled spatula + 1 18 to 22 cm circle in diameter + 1 small saucepan + 1 whisk

Thursday, January 6: Potato ravioli with roast poultry / Glazed mango soufflé

The ingredients for 4 people :

  • 12 small fingerling potatoes
  • 100g melted butter
  • 1 egg yolk
  • 3 thighs or 3 roast chicken breasts
  • 25 g semi-salted butter
  • 3 shallots, peeled and chopped
  • 2 sprigs of parsley, leafless and chopped
  • 2 tbsp. tablespoons chilli sauce
  • 1 piece of parmesan of 100 g
  • Olive oil
  • Fine salt and ground pepper

Utensils : 1 saucepan + 1 skimmer + 2 plates + 1 bowl of ice cubes + 1 cutting board + 1 chef’s knife + 1 blender + 1 spatula + 1 salad bowl + 1 oven dish + butcher’s string

The ingredients for 4 people :

  • 1 ripe mango, peeled and cut into small cubes
  • 2 eggs
  • The zest of 1 lime
  • Juice of 1 lime
  • 30g + 35g caster sugar
  • The pulp of a vanilla pod
  • 25 cl of whipped full liquid cream, whipped cream

Utensils : 2 salad bowls + 1 double boiler + 1 hand mixer + 1 spatula + 1 whisk + 1 microplane grater
