How to calculate the cooking time of a chicken?
The cooking time of a chicken depends on its size, its quality (an industrial chicken cooks faster) and the cooking method. Assuming that the chicken will be cooked in the oven – the simplest and most common way – at 200 degrees, it takes 1h30 for a 1.5 kilo chicken, 2 hours for 2 kilos, 3 hours for 3 kilos, And so on.
In case of cooking at low temperature, to obtain a very tender flesh, it will be necessary to cook at 90 degrees for 3h15 a small chicken of 1.2 kilos. We will add 10 minutes of cooking per additional 100 grams.
The chicken is done when the cooking probe reads 82 degrees inside the whole chicken. Another way to check for doneness is to prick the chicken on the side. If the juice that comes out is white or translucent, it is cooked. If not, it still deserves a little cooking.
What temperature should chicken be cooked at?
Generally, the chicken is put in a very hot oven, that is to say between 200 and 220 degrees. But heat tends to dry out the meat and shrink the flesh, which can change the taste of the meat. How to cook a chicken without an oven?
In the absence of an oven, it is possible to cook a whole chicken in a casserole. To do this, simply pour 10 milliliters of olive oil to heat in the casserole. When the oil is hot, add the chicken with the salt, pepper and thyme, and cover the pan. It will have to be turned and watered regularly so that it browns evenly. On medium heat, cooking takes about 50 minutes.
It is also possible to cook chicken in the pan, but it is recommended to cut it beforehand. Many recipes, such as this free-range chicken from Auvergne with pomegranate juice, require, in any case, a prior cutting. Then the pieces can be grilled in a pan.
How to cook a chicken quickly?
To cook a whole chicken quickly, it is possible to raise the temperature of the oven up to 250 degrees. The chicken can cook at this heat for about 20 minutes. It will then be necessary to go back down to 200 degrees to avoid obtaining meat that is too dry and tasteless. To quickly cook a whole chicken, we prefer a small industrial chicken which will take less time than a plump free-range chicken.
The quickest way to cook chicken, however, is to cook it in pieces. Thus, for these free-range chicken breasts marinated in lime, it only takes 10 minutes to cook. The same time is necessary for cooking in a casserole with a base of water and oil. And of course, the smaller the pieces, the shorter the cooking time.
